I have a confession to make:
I come from a self-taught home baker background!
That may surprise you since I did attend Le Cordon Bleu in London where I studied pâtisserie. The truth is I mastered the art of pastries well before then.
In fact, I spent 30 years of trial and error working out the secrets to perfect pastries. I would look at pastry chefs and wonder, “How on earth do they get it all so perfect? What am I doing wrong?!” Little by little, I finally figured out what I was doing wrong — and how to fix it.
Now, every time I feel life might be falling apart, I know my pastries won’t be. Baking is now my therapy and gift to the world. What baking has shown me is that is less about the skill and so much more about the other things it gives me: confidence, self esteem, joy, all the positive stuff that comes from the simple act of creating something myself from scratch and also community – especially when it comes to sharing what I’ve made with those most important to me. That completes the circle for me.
Always in my kitchen, I love having people round my table to share delicious home-crafted food. I founded Chez Shamwari, a pop-up tearoom in my house serving exclusive high end afternoon teas in 2011. I fell in love with pâtisserie and so began my journey to learn this craft from any source I could: studying recipe books, attending recreational cookery courses, and volunteering as a classroom assistant to award-winning pastry chef, author, and tutor Mark Tilling.
I went on to do the recipe testing for Mark’s “Mastering Chocolate” cookbook. Eager to cement my credibility, I took a career break from my day job and qualified as a professional pastry chef at Le Cordon Bleu cookery school in London in 2018.

In this kickoff module you’ll learn the 10 fundamentals of creating delicious shortcrust pastry
Module 2
Make It Savoury & Make It Sweet
Now that you know the 10 fundamentals of creating beautiful shortcrust pastry. At the end of this module you’ll be able to make mouthwatering savoury and sweet tarts and pies.
Module 3
Sugar Rush
Now that you’ve mastered basic shortcrust you are ready to take on the slightly more challenging sweet pastry (pâte sucrée) that you see in the finest Parisieene pâtisseries. Asked where you got these beauties, you’ll be able to say ‘I made them myself!’
Module 4
Variations On A Theme
Now that you’ve learnt the fundamentals of both your shortcrust and sweet pastry doughs, it’s time to make these recipes your own. In this module you will learn how to substitute certain ingredients and get creative. This is where you start to create your signature pastries.
Module 5
The Perfect Tea Party
Now for the fun part. This is where you get to create your own perfect tea party, bringing all your favourite people together to taste your creations and share in the deliciousness. You’ll be taken step by step on how to deliver this. From creating the menu, to planning table decorations, to plating and serving, to ultimately enjoying the company and conversation over a cup of tea. This will be a tea party talked about for years!

- The recipes all contain gluten and cannot be adapted by simply replacing the plain flour with gluten free flour
What you will need
- You will need to purchase all your ingredients for the whole course. Ingredient costs are not included in the course fees.
- You may need to purchase specific equipment if you don’t already have these at home, e.g. baking tins but it is expected this will be minimal. A full equipment list will be provided to you. The purchase of these is not included in the cost of the course.
- You will need a kitchen equipped with a hob and oven.
- To access the course, you will need access to the Internet using either your mobile device or computer.

You will learn by lots of practice!

Most modules are 1 week in length, others 2 weeks depending on the complexity and cooking practice involved. This provides you with the flexibility to arrange when in your schedule is best for you to complete the material.

Each module will have video demonstrations that you can watch as many times as you like and will be accompanied by recipes and instructions that can be printed off.

Participation in the private Facebook group will be recommended where you will learn from each other, get feedback and encouragement from your fellow students and from me.

There will be weekly live group Q&A calls with me. If you can’t make these calls, they will be recorded and you will be able to catch up watching them at a later time when convenient for you.
What is the time commitment?
On average you will be committing:
- 5-7 hours per week in the kitchen plus shopping for ingredients and doing the washing up (let’s not forget that!). This time does of course depend on how fast you work.
- 1 hour a week reading or watching course material, attending support calls with me, interacting on the Facebook group. Attending the calls and interacting on Facebook are optional but students who are more engaged are more likely to reach mission accomplished!
